Cheese Box Frequently Asked Questions
We are a family business with less than 10 full time employees doing everything from tending to the land, taking care of our cow herd, making cheese, selling cheese and running a farm store. We are excited to be able to ship our cheese directly to you! Because we are a small team, we are offering common questions below. All orders must be processed through our website. If you need live assistance placing an order, please give us a call at (802) 496-6100. Please note our store hours are Thursday- Saturday 10am-6pm and Sunday 10am-4pm.

Monday at 11:59pm for same week shipping. Orders made after that time will ship the following week.

Boxes are shipped on Tuesdays. During high volume seasons around the holidays boxes may ship Monday thru Wednesday.

Boxes typically arrive within 2 days of shipping and can be expected by Friday. Please ensure that the recipient will be able to receive the package. No replacement boxes will be shipped for boxes delivered on time but not properly stored upon receipt.

For every address, each order must be placed and paid for individually. There is not a way to pay for one order going to multiple addresses.

We cut cheese fresh to order. Cheeses wrapped in cheese paper are best for 2-3 weeks. The fresh cut side which exposes the paste (the inside part of the cheese below the rind) tends to try and grow a rind after a while. If it does this, you can just cut that part off and enjoy the rest of the cheese. Vac-sealed cuts last for a couple of months.

Sorry to break it to you, but the cheese already has mold on it! The rinds are made of intentional mold, yeast, and bacteria that help give the cheese it’s flavor and texture. The microbes are our friends :)
If the paste is trying to regrow a rind you can cut that part off or use a knife to scrape it off. You can enjoy the rest of the cheese!

When we age cheese in our caves, they are in a warmer environment (55F-60F). Cheese is cooled to slow down development. It is normal for the ice packs to have melted during travel and is not a food safety issue.

Because cheese is a perishable product, it suffers when it gets lost in the mail system. During periods of high volume shipping around the holidays, it is best to ship 2 weeks before the intended holiday/event. This helps to avoid having your package in circulation during times when carriers are most likely to lose packages, and allows for a buffer time should they lose it and it needs to be replaced.

If you received an email that it arrived and you can’t find it, did you double check the back door? Ok, asking just in case! If the end of the week came and went with no sign of your package, please send us an email at info@vontrappfarmstead.com and we will work together to find a solution.

Bring it to room temperature still wrapped. Depending on your environment this is 1-2 hours. Room temperature cheese will allow flavors and aromas to be released as well as allow the texture to soften for the most delicious experience.
