Mt. Alice
Style: Bloomy Rind
Named for the peak above the farm, Mt. Alice has bright flavors of butter, crème fraîche, and floral lemon when young. When fully ripened, its elegant and gooey with flavors of woodsy mushroom & brassica.
Mad River Blue
Style: Natural Rind Blue Cheese
Mad River Blue has a smooth and buttery texture with bright blue-green veining. It offers a mild blue bite and complex flavors of anise, cocoa, dried fruits and minerals with a deep umami backbone.
Oma
Style: Washed Rind Tomme, aged at the Cellars At Jasper Hill
Balancing sweet and pungent flavors, Oma has notes of butter, raw nuts, cured meats, and roasted vegetables. Oma’s thin, earthy rind compliments the rich, pudding-like paste.
Savage
Style: Alpine Style, aged 1 year
Savage is our longest aged cheese, named for Samuel S. Savage, who settled the von Trapp Farm in the 1700s. Savage’s flavors of toasty caramelized onion, beef broth, pâté, and grass showcase our milk.
Drunk Alice
Style: Washed Rind*
Drunk Alice is our seasonal and always-unique washed rind version of Mt Alice. We partner with local Vermont breweries and use one of their beers or ciders to wash the cheese. The result is a more funky version of Mt Alice with extra pudgy creamline. Each batch is different and uniquely delicious.
